This is a serious question because I don't know the answer.

How long can live rock be left out of the tank without being submerged

For a while as long as it stays damp. You can wrap it with wet newspaper to keep it moist

I have lots of live rock and I want to aquascape them and glue them together.

Not sure but is the tank running with livestock or you just starting it up with live rock?
 
It's a well established system. Years old

There might be some die off which could cause some minor issues. Do you have another tank you could do the scape in to keep them wet?

Back when you could get live rock from reefs, they would send it two day wrapped in wet newspapers. How long will it take you and can you spray with salt water
